  • Flat Iron Jerky..... Big Chief

    Hi Mountain (Mesquite) cured 36 hours, put em in the Big Chief before I left for a job 2 hours away, along with some Jack Daniels Oak barrel chips and pellets.... Got back 6 hours later, they were right where+- I thought they would be as far as being finished goes (thanks Big Chief) and just needed a little thyme to finish up (3+- hours)..... These were for me wife's Pappa for fathers day...... Good Stuff!!!! Hi Mountain Mesquite for jerky is our favorite, I do add additional CBP and some ground Kosher on top...... The Big Chief, or Little Chief, do have a place in my world.

                Damn fine beef jerky there! Now kick it up a bit and make some Gator jerky. Stewarts meats in McKenna will hook you up with that big lizard.
                Smoke it.. and they will come!
