  • Hot And Fast Ribs, Take 4

    Cruising the meat department yesterday, noticed a lonely 1/2 rack of Baby Back ribs looking up at me..... I had nothing going on that night, so picked them up for something to do.... Rubbed with EVOO and Mad Hunky and foiled..... Directly over 375* heat for 30 minutes, flipped, then another 30 minutes over the heat..... Unfoiled, then moved to indirect and added a chunk of apple for smoke for 30 minutes, then SBR's for another 15 minutes..... Turned oot pretty good for 1.45 hour.... 1 application of the sauce was not enough sweet for me and the kid, so I brushed more on. 4-5 hour ribs are better IMO, but if you don't have the thyme, and like to experiment like I do, these will work for a "rib fix".

        Sometimes you have to have ribs..... just cook more next time and vac pac...hehehe..hide them from the kids....

              For me anyway, its more aboot experimenting and trying different techniques. ALX was the first one to tell me aboot this method, prolly 4-5 years ago. He said they come oot pretty good, so I had to try it. They just don't get the smoke flavor like a typical 3-2-1 or 2-2-1.... Think next thyme, I might smoke first for an hour, foil an hour, then unfoil and glaze at the 350-375* range I dunno, just thinkin

                    When you're really in a rush you can parboil them for about 20min then finish on the grill.

                      They look great Scott!

                      I am a purist when it comes to ribbage tho... I prefer the low and slow method meself... hot and fast belongs between the sheets...

                          Lookin' good, definitely worth a shot!
