  • Hickory smoked crown roast of pork

    First time I have ever tried one of these...

    Paid $1.75/lb. for this...Already frenched and chine bone removed...


    Trimmed and bound after swimming overnight in the Hunky pork brine...Then rubbed with a mix of garlic, rosemary, thyme, S&P, and some olive oli...Ready for the hickory treatment...


    After a few hours and a few more beers it looks like this...


    On the plate with some shrooms, asparagus sautéed with shallots, and some of Lena's awesome parmesan spuds...


    Well Im not hungry now...It all turned out great...

              Pre-frenched? Wow.... regardless of that- beautiful! I get those cuts once in a while..and I become freakin' Jason..I have to cut good poke chops...sigh.

                        That looks outstanding man! Sterling Silver is known for their high quality pork. I won some a few years back on another forum where they had a superbowl smoke contest. And they were supreme.

                        I have not seen a prepped crown roast like the one you made but am gonna keep my eye out. Great looking plate and like the look of Lena's parmeson taters too. for a great looking plate!
