here ya go this is for a big batch

            4 stalks of Celery

            1 bunch of Green onions

            1 Red bell pepper

            2 jalpaneos

            1/4 cup of mushrooms

Combine these ingredients in a food processor and chop fine. You will use 1 cup of this mixture in the sauce. The rest makes the start of a great salsa.

1 c Vadila onion chopped fine

saute these ingredients in EVOO til onion is clear then add

            4 Tbspns chopped Garlic

1 6 pound 10 oz can of peaches drained and chopped in a food processor without syrup

3 large jars of Ragu plain sauce and 1 jar of water

            stir

            4 Tbspns Dijon mustard

            3 c light brown sugar

            1 ½ pound honey

1 cup of my homemade hot sauce

¾ bottle of Tabasco Chipolte sauce

            ½ c soy sauce

            1 cup Old Crow Bourbon

5 large shakes of worchestershire sauce.

combine stir and simmer for 1 hour til flavors come together, add syrup from peaches if needed

think its everthing, I remember things as i do it but this should be close

if you use store bought hot sauce you will probally need 2 cups and cut back on the brown sugar my homemade hot sauce is way hotter than red hot or even tabasco cayene pepper sauce just a heads up
