  • Smoked Mayonnaise

    Greetings. Went to a restaurant yesterday (Flip Burger Boutique in Atlanta) that had a house-made smoked mayonnaise. The wife liked it. Anybody have any experience or ideas with smoking mayo?

    Interesting. My guess is liquid smoke added in. I think you could actually smoke it...but you would have to do it with some serious thought to climate controll to keep it safe.

    I'm thinking Colorado, January, at night...now that would be a cold smoke!!

      Pour the mayo in a disposable aluminum pan, with that pan sitting in another pan almost filled with ice. Stick it in a smoker and cold smoke it with some smoldering chips of your choice.

      Or buy one of these...

          I was gonna suggest the Smoking gun...

                I'd try to use bacon grease for the oil maybe??

                    If you smoked a cup of olive oil and then made the mayo you wouldn't have any risk of spoilage. With a stick blender it is uber easy to make mayonnaise. http://www.smoked-meat.com/forum/sho...ght=mayonnaise

                      This was published in Food and Wine....

                      Richard Blais, the winner of Top Chef All-Stars. And the owner of Atlanta's growing Flip burger chain.

                      At his Flip burger chain, Blais uses smoky hickory powder in the mayonnaise.

                      Also on a couple cooking shows(Rachael Ray Show & on Top Chef) he shows how to make smoked mayo using a Smoke Pistol for single servings at home. Shows are on YouTube

                          I'm sure that would be very tasty, but would taste like bacon more than the smoky mayo served at the restaurant . Plus if you like the bacon taste in mayo, several different companies(Kraft for one) sell versions of bacon mayo in the chain grocery stores already.

                          I'm guessing that a person could buy some of the smoky hickory powder and play with the mix a little and get real close in taste or buy a smoking gun and try making it that way.
                          I also bet after reading about him he has other smoked ingredients in it also, like smoked salt and smoked paprika.

                          I think playing with the smoking gun could be fun with other projects too.

                            If anyone wants to play I do have a supply of applewood "smoke"powder I don't use much of... don't take much. Free for the asking.
