Caramelised Onion Sausages
Was wandering around costco one day and they were handing out samples of caramelised onion sausage.
That's a good Idea I thought, but I'll actually put some meat and proper seasonings in mine :-)
So first the Involved method.
1) caramelise some onions.
I'd never done this before, looked it up on the net.
Essentially, for those who haven't done it, you just cook onions on a medium heat, stirring all the time. They are done, when they are just on the verge of burning. It takes approximately 1.5 - 2 hours.
Next the Easy method
I have made these the involved way - once (lol)
And the easy way five or six times

The easy way you can defrost the meat, grind, mix and even stuff if you wanted to in the time it takes to make your own caramelised onions. You do the math

I always leave my sausage mixes overnight and stuff the next day.
Seasoning.
Now because I always use packs of shoulder steaks from costco I generally make sausages in 3lb lots (cos that's what the packs weigh).
So this is the seasoning and method for 3lb of lean Pork shoulder.(leaner the better - you're throwing in up to a pound of caramelised onions, fat is not necessary)
Seasoning mix
4 tsp seasalt - you can use TQ if you want.
2 tsp coriander seeds
1 tsp peppercorns
4 tsp dried onion
Other stuff
12-16 oz caramelised onion
1/2 cup oats
1/2 pint or one small stubby bottle of beer
Now you might be wondering why there is 4 tsp of dried onion in the spice blend when you're adding about 3lb of cooked onions. Very simple, caramelised onions don't actually taste much like onions. very sweet, but not terribly onioney.
Anyway there you go.
One thing to be careful of. Because of all the sugar in the onion, you need to cooks these low and slow, otherwise the sugar cooks out and can burn :-)
They are a slightly aromatic and sweet sausage, think you lot will like them.
