          I'm gettin' all tingly looking at your sausage. I've got some of Checkered's Italian seasoning, but haven't tried it yet. I love the smell, mmmm fennel seeds. I've gotta buy some casings online any suggestions?

          Haven't tried making them before, got everything but the casings.

                Natural 30-ish what 32-35 I think... general hog casings

                  Cheryl, I really like the Hog select 29/32 mm from Butcher n Packer.... Cost a bit more than the normal larger ones, but are smooth and thin and have a great snap when cooked and are not tough like some others..... Rich, it does make a nice little pop in your mouth snack, but I put it on pizza.... The other half in omlet tomorrow..... Not quite pork, but damn good.

                    Yanno... it IS a superior casing for texture. I bow to your call, sir. I go cheap and smoke them. Difference there.
