  • What is a block roast ?

    I was looking over some briskets yesterday and noticed a cut of beef I had never seen before. Block roast. Looked very lean with almost zero marble . Anyone ever smoked one of these ?

    Not sure, but I think I've heard "Rump Roast" referred to as "Block Roast".

        Rump roast is what i found too... interesting though i found another name for a tri tip is "top block" roast...

          Oh really now ? I am going to butcher shop now as the label may have said just that. The shape did not seem right to me though. I will snap a pic and see what you guys think.

                By the way. I did go by the meat shop. The blocks were all gone. They aid they were putting more out today. I am leaving in a few minutes to grab a couple..

                  its not that there renaming them, its a logistics thing, in certain areas they just call them different names and they are used to that so it wont change. no different than "riblets", true riblets are the feather bones from the spine, yet they sell rib trimmings and call them riblets as well...

                  what they should do is utilize the NAMPA meat cut numbers, actually i have seen the numbers on the labels occaisionally. that would take the confusion out big time and would be a set standard.
