I knew I shouldn't have told my neighbor that I bought a new smoker. A couple of days ago she brought me cheese, top round and pork loin (CB) to smoke. Cheese is done and today I did her 3 lb top round, I was worried because it was a really odd shaped (like a paper roll squished on one end) and I was sure it wouldn't cook evenly. Anyway, after a liberal application of Bone Dust (picked up for 2.50 at Target.) and 2 days in the sleeping bag, I smoked it for about 3 hours at 220F. Had to use the "special blend" as it's all I had left over. Smoked to 130F. Foiled and rested for one hour, then sliced. The roast turned out excellent, cooked to perfection, and extremely tasty. Now I don't want to take it back over to the neighbor's. That was dumb of me to even offer!
