Like I said brined for a while like corned beef then simmered for a few hours it tastes great, just look bloody ugly

If memory serves, she cooked it in the pressure cooker. It was bad enough when she set down a big ol' tongue on the table just kinda staring at ya'... I remember using lots of mustard. The worst part was the leftovers the next day at school... cold tongue sandwiches in the lunchbox.
Who knows? My tastes have changed over the years & if presented properly I might enjoy it.I ain't countin' my chickens on that though.

As far as the appearance of it staring at us, Mom used to slice it before tabling it. That was a big help to us kids. And I actually liked hot beef tongue---very tender!!
But the cold tongue sammies in school lunches did suck, however I never was too fond of any kind of "cold beef".
My brother and I used to say, "Oh well, it's better than the damn "Cow Brains" they put on the table for us!!!!"

tongue is one of my favourite sandwich meats - though I tend to eat most of it before it gets anywhere near a slice of bread
Never cooked my own though.
Over here it's usually pressed and sliced. I suppose you could roll and vacumn pack.
I noticed one of the sellers at the new swadlincote farmers market was selling raw tongues last week. First time I've ever seen it for sale.
So might have to do a bit of research and have ago at making my own.
The texture and flavour are quite unique and more likely to appeal to someone with very savoury taste buds.

My mom used to make tongue...grandpa had a farm and butchered cattle every year, nothing went to waste. It was kinda gross boiling it in the pot and seems I remember a greenish scum on the water, but once peeled and prepared, it made some kick ass sammies. I'd make some today, but I think Mrs. Engineer would divorce me if I plopped a cow tongue down on the counter. One of those things where you have to choose your battles i guess.BBQ Eng.
