  • Poor Man's Bacon Wrapped Filet Mignon

    Made some meatloaf up for dinner one night to smoke on the electric Brinkman. Simple meatloaf recipe, pound of ground chuck, 2 eggs, a pack of Lipton Onion Soup mix, a 1/2 pack of Stove Top stuffing, 2 eggs, a little ketchup, a little A1 sauce and salt and pepper.

    Decided to do individual loaves and then I decided to shape them like a filet and wrap them in bacon. They made nice and delicious individual servings. I smoked them on the broiler pan just because it would be easy to get them in and out of the smoker.

      Can I be a poor man at your house tonight? those look great.. now if I could only get somebody other than my one daughter to eat meatloaf... lucky for me she loves it and asks for it... maybe I will give these a try and call it poor mans filet..LOL
