  • Alder Smoked Beef Bottom Round Roast - JAB and more

    Hi all, it's been a long time since I posted a cook video. I did a simple cook yesterday and thought I'd blow the dust off my video camera and share my cook. Nothing fancy here. Just a real simple beef roast with EVO, MH JAB, onion powder, CGP, thyme and Coarse sea salt. Slow cooked on my Yoder YS640 with the Amaze-N-tube smoker assisting with extra smoke. I was burning Bear Mountain Cascade Alder pellets. Cook temp was 225 and the roasts were pulled @ 136 F. You will see in the video they turned out super tender and juicy. I was really happy with the end result as was my family. As I said, nothing fancy here just some great results I think.

    Ingredients
    2 Medium Sized Beef Bottom Round Roasts
    Thyme (Apply Liberally)
    Onion Powder (to your liking)
    Coarse Ground Black Pepper (Apply Liberally)
    Coarse Sea Salt (to your liking)
    Mad Hunky "Just Add Beef" Rub (Apply Liberally)
    Coarse Sea Salt (to your liking)

                    And you guys almost had me convinced that top/bottom/eye of round roasts could only be used for jerky or ......SV...
