  • Pistachio crusted salmon

    Hello again. My wife bought a couple of salmon filets and said cook these. With the hurricane blowing through the Weber was out. So lets get the cast iron out.

    I started with a 1/2 cup of pistachios, 1/2 cup butter garlic croutons and a couple dashes of onion powder.



    I ground that to dust.



    Now for the salmon and a couple of imitation crab legs.



    All ready for the iron.



    Into a piping hot skillet for about a minute on each side. Then into the oven for about 5 minutes.



    Served with a fresh dill sauce and a couple of radishes.

        At Imitation Bay on the Imitation Gulf...

        Got folks in da' house that can't eat pistachios, butt yup, that does look great!

                  Thanks everybody. I am really thankful for the points and kind words. The flavors on the plate worked together perfectly. The imitation crab was for my daughter who doesn't like real seafood. I don't know about her sometimes.
