Doing a wedding in a couple weeks where the bride asked me to make maple bacon and Kentucky Bourbon Pie cupcakes.
So I tried out some recipes last night and brought the cupcakes into work today...so far they are a huge hit!
Here is the recipe I used for the maple bacon cake. I cheated on the icing and used store bought butter-cream with about a cup of maple syrup added.
1 Box of Yellow cake Mix
3 Eggs
1/4 cup Veggie Oil
1 Cup Water
3/4 Cup Maple Syrup
1/2 Cup Bacon Crumbles

The Bourbon pie recipe I used:
1 box butter cake mix or yellow cake mix(and ingredients on box)
1/2 cup Kentucky Bourbon (I used Woodford Reserve)
1 3/4 cups pecans (some to sprinkle on top)
1 1/2 cup chocolate chips
Instead of adding the pecans and chocolate chips to the cake mix, I put a little of each in the bottom of each cupcake. This did not work too well so next time I will put the pecans on the bottom and the chips on top.

Once I filled the cupcake pan I took some chocolate and caramel ice cream topping and swirled some on top of each cupcake. Also, if you don't have enough batter to fill your cupcake pan, you should add a little water to the empty ones to help from burning up your pan.
