A lot like the mighty Bloody Mary, the "Breakfast Hash" is as much a part of a Northwest weekend breakfast as is things like.... rain/snow/sleet/wind/power outages/beer runs/neighbors dogs pooping in your yard, etc..... 
Personally, I would take a "Hash" or "Scramble" over anything like that off a restaurant menu, over a #2 for example...
Ours are typically based on left over chopped up sausage, cooked bacon,beef, etc..... Mixed with (potatoes) hash browns, home fries, etc... eggs (scrambled or fried within the mess), cheese, cooked, peppers, mushrooms, onions, etc....
Cooked as it should be in order & smothered with cheese until the cheese melts, but don't forget aboot the broiler if your cooking gear can take it ( most can I think, it's only a couple minutes).... Under the broiler to get that cheese melted, OR in MY case until it gets good & bubbly with some dark crust on it
