  • Sunday Brunch Baked Eggs in Phyllo

    While making the strudel Sunday morning, I had 5 sheets of phyllo left. Was just going to use them up, but then I had another idea. Funny how they just come to ya.

    Buttered and layered them. Then cut into 6 pieces. Pushed them into a muffin pan. Plopped an egg in each and baked at 375 for about 20 minutes. Then topped them with shredded smoked peppadew havarti cheese and chives. Baked for another 5 minutes.

    Man, are they good. Two of these with a couple slices of the strudel made for a great Sunday brunch. Guess what's for breakfast tomorrow? I'll be eating a couple of these on the way out the door. Lol. Thanks for checking it out.

      I've never baked one either. But will be now. Should be good cold tomorrow morning too. If I had planned this there would have been bacon on it.

              You just continue to keep coming up with great stuff, they look great!
              Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
              My best asset however is the inspiration from the members on this forum.

                      Beautiful job! I really like the looks of this and agree that some bacon or even Chorizo with a little salsa would be a great addition. Great job, Ray!

                        I have had these quite a few times. Google up Shirred eggs and you will find a plethora of recipes. They are usually cooked until the whites are set and the yolks just thickened a bit, but not hard.

                            Bacon would definitely make it better. Chorizo sounds good too. Got thinking about this today. What about smoked leftovers? If you had a deeper muffin pan or small ramekin you could put some pulled pork, pulled chuck or chicken on the bottom. Then top it with the egg and cheese. Instead of the phyllo dough, you could use the puff pastry I used for the apple pies. Lots of ways to keep it interesting.

                            Thank you. Figured it wasn't something new, but now have a name for it. I was tickled that it worked out and wanted to share. Honestly had no idea how long to bake it for. Threw it in the last part of the strudel. In the future I'll leave the yolk a little more runny. I like it that way. But others can make it as they wish. The fact that it's "portable" is a plus. Grabbed two of these on the way out the door this morning. Just as good cold as they are warm.

                              First off you get points from me for workin with the phyllo dough at all(The guy that came up with that is the same sadistict SOB that invented clingwrap) But second I think it's a great idea too.
