  • Razor sharp

I had been using the cardboard back page on legal pads for years to hone my wood carving tools to a razor edge. I had never thought of trying that with my kitchen knives for some reason...til today. I found a nice old 5" Sabatier carbon steel chef knife at the thrift store on my lunch hour, and managed to put a nice edge on it while I was at my desk at work in the afternoon.
You can't shape a blade this way, but you can polish one up like you would on 1000 grit paper. Keep the angle constant, and the pressure light to medium. I have an old sushi knife that needs some TLC next...

I used to use the "Chipboard" (cardboard) from the bottom of scratch pad tablets to polish my Brass in the Army. A little "Brasso" on a piece of chipboard would get rid of any blemish.

Never thought about sharpening knives with it !!!

Wish I knew that " back in the day " LOL !
First leave from basic training, Ft Jackson, 1969. Run down the stairs of the barracks, DI stops me. He says my BRASS needs polished up before I can get on the bus for town.
I go back inside, wait a few minutes, go back out. Run back down the stairs, I say " how do my BOOTS look now, Sarge ? " HE SAYS NICE SHINE ! Got on the bus quick.....

Yup, been doin' that for years. Tablet cardboards are great for that final honing.

Make sure it's on a hard surface so you don't roll the edge

and I have found the best way to keep a knife razor sharp is to purchase the wife a cheap block of knives so she can cut the cast iron and such with them and when the kids touch em taze are mase them.
