    Seasoned with Weber Mesquite Seasoning



    I took Don's advice and placed chips directly on the coals, it worked really well and I had a ton more smoke!



    Not quite as pink as I'd like, but they were really moist and flavorful!

    Sauteed some mushrooms, onions, and green peppers.



    Steak with sauteed goodness, steamed carrots, and a cheese pasta casserole.

    As always, it was delicious!

          Looks darn tasty except for the cooked carrots( ). I like those Weber bottled seasonings some of them are downright good.

              Nice job Chuck! More advice if you want it... try this next time. Place the coals on one side of the grill with wood chips for about 30-45 mins. Don't use too many coals that the steaks really start to cook thoroughly, you really only want the smoker temp in the 180 to 215 range during this time. Then, after you've hit em with some smoke, move the steaks to the hot zone and give em a quick sear. Will be helpful for you to keep your steak temps and desired pinkness this way, while hitting them with some smoke! ! Glad to see you're jumping in here and posting lots of pics. These folks love it!
