  • Some comfort food...Baked steak with pan gravy

    Borrowed this recipe from Lena...
    This is one of her special dinners that I just love...
    When done right the meat will just break apart and melt in yer mouth...
    Weather was great and I needed to get my fire fix..
    We'll see if I can pull this off...Outdoors...

    Fired up the smoky joe and put a bit of sear on 1.75 lbs of top round...
    Seasoned with smoked kosher, CBP and some thyme...


    Then we moved to the 22.5" with the inverted vortex...
    Double snake of lump around the outside and a pan blocking the airflow through the middle...
    Used some of the lit coals from the SJ to get the lump going...

    Added 2 cups of beef stock and a buncha portabellas...
    Put a lid on it and let it cook for 3+ hours...
    Temps ran steady at 220-275 the whole time...


    Looks like this after 3 hours...


    Pulled out the meat and shrooms and rested in the house...The meat not me...

    Return the pan drippings to the HOT Smoky Joe and thickened with a cornstarch slurry...


    Meanwhile in the house Lena prepared some mashed taters and put the steam to some asparagus...

    Looks like its time to eat...Notice how the meat just breaks apart when bent...


    Well I didn't screw it up too bad but I think that Lena will get her recipe back now...

        Excellent dinner Craig. I wouldn't have ever thought up something like that. to you and Lena.
        Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
        My best asset however is the inspiration from the members on this forum.

            Huh... sooo kinda like a real high quality pot roast? Interesting... never had steak this way. Well, maybe Swiss style, but that's usually a chuckie cut.

              Pot roast? By the slice? I guess...
              I have had it from the oven and pressure cooked...Thinkin even crock pot...This worked as well in my opinion...And was so much more fun
