  • Hickory smoked chicken cordon bleu.....Meatloaf.......

    A crazy idea that turned out pretty darned good...

    Mixed up 2# ground chicken with a cup and a half of ground up focaccia bread, 2 eggs, 1/2 cup onion,and 1/2 cup Parmigiano Reggiano...Also added some Dijon mustard, soy sauce, thyme, salt and pepper...


    Flattened out the mix and dusted with some of Tanya's rub...Rub on the inside


    Next I laid down 7 ounces of good quality baby Swiss cheese...


    And about 1/2 pound of deli sliced ham...


    And a bit more of the Reggiano cheese...


    Then rolled the whole mess up and shaped it to look like a loaf...


    But were not done yet...

    Lets wrap the whole thing in Prosciutto...


    And then add 3+ hours of Hickory smoke...Smoked to 168 internal...


    Served up on the plate with some grilled corn and some roasted red pepper Quinoa and brown rice blend...


    Also made some Parmesan-Dijon Cream sauce...Just a bit to kick up the flavor a bit...


    Loaf turned out quite moist and flavorful...Prosciutto wrap seemed to seal in the juices and also gave a nice chew to the outside...On the list to do again...

    That looks FREAKen' great! on reload man. You know I'm stealing this one.
    Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
    My best asset however is the inspiration from the members on this forum.
