Hmmm I have heard of raspberry... but you got a bit more tart with those. Geeez... well, if you are a sweet fan that'll fit in. I just dunno about a savory meat and STRAWBERRY... But hell... why not?

Thinking maybe some basil...and perhaps some rice vinegar?

Sounds good, would not take more than a blender and a tasty rib subject to check it out!

I was thinking of maybe a little cayenne in there to help with the sweetness. Wasn't sure if this was worth trying or not. but what the hell, it just might be a winner...

I agree, I will also recommend straining the seeds out of the puree before you add it to the rest of the ingredients for your sauce.

strawberry - lemon as a base??? i am thinking chipotle pepper, kosher salt, garlic powder, onion powder, and it needs something else? cant put finger on it... maybe lemon zest instead of juice too

                  maybe some beef stock?

                  any way good luck

I'm with the Old Salt on this one....sounds way too good not to try. Worst case scenario is you waste a quart of strawberries and a few spices....go for it!

Here's a cherry chipotle one that can probably be modified for strawberry.

                      http://www.smoked-meat.com/forum/showthread.php?t=955

                      Cherry Chipotle Barbecue Sauce:

                      2 cups ketchup
                      1 cup cherry preserves
                      1/2 cup cherry juice
                      1/2 cup packed brown sugar
                      3 tablespoons cider vinegar
1 1/2 tablespoons chipotle pepper sauce (find it near tabasco sauce)
                      1 tablespoon worcestershire sauce
                      1 tsp minced garlic
                      1 tsp onion powder

Mix all ingredients together and simmer for 20-30 minutes. I then let cool a little and run it through the food processor or blender to break up all the cherries.

                            This one sounds pretty good!!
The rest I found had too much sugar in them.

                            Strawberry BBQ Sauce

                            ingredients

                            4 cups strawberries, chopped
                            1/2 cup chili sauce
                            1/4 cup apple cider vinegar
                            3 cloves garlic, minced

                            preparation

In a large saucepan over medium heat, combine half of the strawberries, the chili sauce, vinegar, and garlic. Bring the mixture to a boil and simmer for 20 minutes to thicken. Add the remaining strawberries and cook just until heated through.

Starwberries make a good sauce for chicken and pork but not so much for beef unless it's a little sweet IMHO. Good luck. Always fun to experiment!
