  • Cheddar Cheese,Wild Rice Brat Dogs.

    Decided it was time for some dogs today.I love my cheddar cheese and Wild rice brats but never liked the giant wrist size hog casings They sell here in town.So I used the 26-28 mm sheep casings I bought a while back.Man what a perfect size.And this time I didn't even have a problem untangling themJust got a few picks here today.

    First one shows the stuff.5 lb veny,5 pork ,2 lb High temp cheddar and 1/2 pound( pre weight) wild rice that I boiled up last night. And the spice pack was one from Grandpa josh's made here in Minn.



    All mixed up,just did it in a stainless bowl by hand today.


    The next three is during and after the stuffing.



    I ended up with 72 dogs and made 4 patties out of some left over mix.Man theese things are awsome
    I better hurry up and lose some weight cause I cant even have one of these till I do

        Looking great Bill and I love that stainless counter! (out of points, will try remember tomorrow...)

        Is that Uncle Josh or Grandpa Josh mix? Reason I ask is we use a Grandpa Josh and I haven't heard of Uncle Josh... wondering if there is a mix I wasn't aware of and might have to try?

                Fish I bought these at Butcher Packer.But cheryl looked there for them the other day and they didnt have em listed

                I just the other day orderd a batch from syracuse casing preflushed and tubed.never tried em before but cant wait.

                    Nice! Love your workspace too. That wouldn't fit in my house.

                          Man could I get into some of those! Awesome job!
                          Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                          My best asset however is the inspiration from the members on this forum.
