  • Pickled me some Sausage

    Ok, Been wanting to do this since I saw Kyote's Post about Robby's Pickled Bar Sausage. Costco carries Kiolbasa Mesquite Smoked Beef Sausage, which is one of mine and my wife's favorites. They package it in a double vacuum packed thingus that comes in at about 4 ounces short of three pounds. I was able to get all of the sausage into a 1/2 gallon wide mouth Mason jar, so I halved the recipe for the brine. Wednesday will be three days, so I will give it a try then. Can't wait!!

      Hmmm. I've never seen those at my Costco..will have to look closer.

      I've been wanting to do this for my VFW some day. Can't wait to hear about them!

        Kiolbasa Provision Company is in San Antonio, so it may just be a regional thing. They do make some really good sausage though.

                I pickled some with homemade kielbasa. Man, those puppies are addicting. Your's look awesome. I also like Kiolbasa's products.

                            So how's the pickling going??
                            I have been pickling everything! The red cabbage kraut turned out fantastic! Make a Half gallon jar of traditional dill pickles and the wife unit has just about finished it off. The Sausage is really good after a couple of weeks in the brine. Did some jalapeņos. That was a surprise. I tasted the raw ones, and they had virtually no heat. I packed then in a jar for fermentation and told my wife I figured I needed to go buy a couple of Habaneros so they would have some heat. I fetched one from the fermenting jar before going to the store. WOW! These things will light you up big time. So any of you that are going to ferment peppers, it is going to magnify the heat big time. No habaneros needed. I am having a blast with the fermentation. Since cucumbers are less easy to come by I'm going to put up a jar of zucchini with dill pickle seasoning. I will let you know how that turns out.

                              I'm just starting out with fermenting experimenting. I ordered some of these pickle pipes and glass weights originally from that startup thing. These "lids" have an airlock so that air goes out but doesn't come back in. cheap and super easy...check them out!! Fits any wide mouth mason jar.
