  • Thoughts & Ideas Wanted for Chicken Snack Stix or Pepperoni

    Been thinking about making some Chicken Snack Sticks for a quite a while & I am thinking the basic Kolbasz seasonings (Paprika, CBP, Garlic & Onion) with Tender Quick for the cure/salt would be great with ground chicken & smoked with Hickory...... Any input or thoughts are welcome & appreciated. Thanks!

      How about a Chiken Feta T-H sausage with cure stuffed and smoked with Hickory.Smoked low to keep the cheese initially and then take it to temp.And add 2Tsp. smitty's.How's that for pushing the sausage envelope?

        Since you have already rocked the chicken pork fusion thing, how about a chicken cor don blu snack stick? ya know? maybe chicken, ham and some swiss?? even breaded and deep fryed as an appetiser? Well don't look at me that way, , ,you asked

          Ooo Oooo I know, I Know, , ,Hawaiin Chicken sticks, a chicken, teriaki, pineapple kinda thingy. Get the sweet/savory thing goin and maybe even a little heat in there? Crushed red pepper flake?

            JT, I like that one... Canadian Bacon and Pineapple kinda thingy with some Parmesan and Red Peppers. Chicken pizza in a tube?

                I bumped this, because I'm interested in if you made these chicken snack sticks? I'd like to make some pepperoni chicken snacks sticks. My question is you have to cook chicken to 170* (darkmeat) How do you keep the fat from rendering out?

                  Glad you brought this up. I was thinking about this when I made the venison pepperoni..was planning on trying it this weekend. I'll post more when I get home and not on the phone.

                      I have still yet to try these .... I guess I'm just a little..... um.... chicken.... (Be here all week)

                      Just one of those things I forgot aboot & have yet to take on.....

                      Anyone else ever try something like this?

                            I found some Chicken Snack Sticks on the Internet, but you have to Sit, Roll Over, and Beg to get one. I'm too old for that Chit!!!
