  • Cheesy Scallop & Shrimp Casserole

    Fixed a cheesy casserole with scallops and shrimp. Pam wanted to try to toast some mini bagels she cut into slices for dippin' in the cheese sauce.

    Shrimp curled around scallops


    Cheese mixture of shredded cheddar-jack, Parmigiano-Reggiano, and ricotta


    Minced garlic sauteing in butter, lemon juice, and white wine


    Once the garlic is tender and the mixture has reduced some, a quick dredge of the shrimp & scallops in the mix


    A thin layer of the cheese mix in the bottom of foil covered Ramekins, then the dredged shrimp & scallops laid on top of the cheese mix


    Now I poured & mixed the remaining saute mixture into the remaining cheese mixture, then covered the shrimp and scallops with the mix, then dusted the tops with chopped parsley


    Into the 400° Keg using RO lump and orange wood


    Almost ready


    Cheesy casserole with a stuffed shell and some toasted bagel slices

        You don't mess around now, do ya?

        Simply outstanding.

        Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
        My best asset however is the inspiration from the members on this forum.
