    Hey all, I'll admit, the documentation on this post could have been better, however I wasn't sure how it would turn out, and this is purely a post to share a damn good rabbit concoction we came up with tonight.

    Had a fun day hunting with my daughter and niece, brought back 13.



    Broke these down and used a pressure cooker to cook the hind quarters and made a creamy stew which went over a biscuit. An inverted rabbit pot pie if you will!

    Pressured the rabbits with two carrots, two celery stalks, half an onion. S&P and probably 4 cups of water for 30 minutes. Pulled the meat off the hind quarters and made a roux out of butter and flour, added that to the broth and added some cream.

    DAYUM!! Here's the RichT shot of my dinner!



    Will definitely be doing this again.

              we eat a fair few rabbits - good meat.

              I've even added it to sausages in the past.

              Like the inverted pie idea too

                  Grew up on all kinds of critters... rabbit being one of them. Love it. My grandma always fried them in an iron skillet with lard or bacon grease... Damn good eatin I tell ya!

                      We used to play a lot of Hasenpfeffer, when I was a Kid, but I can't remember how it was played. Very similar to "Pinochle".

                          Excellent...Isn't that neice a chef in training? That would be an awesome resource to have around the house too. That's just great seeing an outing like that with your kid. Definitely memories that can never be taken away from you.

                            Thanks, Dana! Yep, it was actually her idea to go down that route. She definitely is stepping up my game in the kitchen! we are being introduced to a whole new world of tastes and technics.

                            cool tip of the week - next time you chop up fresh herbs, shake a little bit of salt on them first - keeps them together in a nice tight pile!
