i don't want to get into symantics on what this may or may not be, but what it is ......is PDT! (pretty damn tasty)
tied and cured a loin for about 10 days with my standard cure of 1-7-5 (#1/k. salt/raw sugar) and some granulated garlic/onion, pepper and paprika.
hanging and starting some cold smoke........

after 4 hrs of smoke it's time to heat it up gently and slowly......

pulled @ 142 and will vac-seal for an over night rest.

sliced and ready to use.............

try grilling your bagel instead of toasting it.........you'll thx me!
