  • Yellow Perch?

    Was talking about smoking fish. I have a decent amount of Lake Erie Yellow Perch and was wondering if anyone out there has done anything with this kind of meat in their smoker.

    It is hard to beat this fillet deep fried but don't really remember ever hearing of anyone smoking it.

    I gotta say... fry those delicious suckers! Not much better on God's green earth than Erie perch!

    Not enough fat to smoke anyway.... you COULD try a hot smoke I suppose..or maybe a fry over coals/wood on a grill?

      I have tried brining and smoking them, much like smoking salmon kinda low, and did not have great results. Like Rich said, maybe a hot grill session. Foil "boat" with butter, lemon, dill, garlic?

      Eccj had a nice cook on some Tilapia filets and shrimp a while back on a grill

        Right on about not enough fat for smoking... you could try something like this though, worked great with walleye which is almost like perch, just a little better...

          I grew up on Lake Erie perch... fried was always the way. Yeah, give it a whirl with the cast iron skillet over hot coals... you'll get some smoke that way. It's been awhile since I have had me some LE perch... YUM!!

            MMMMMMmmmmm-----Yellow Striped Baby Walleyes!!!

            I smoked some already, and they were fine, but not worth the effort.

            I'm another "egg, breading, salt & pepper" and into a hot Frying Pan!!

              I agree about frying being best. You could fillet them and leave the skin on and do them on the grill with chunks of wood for smoke.
              We do crappie, snapper, bunch of flaky meat fish this way. How we did this.

                  You did not grow up.....older yes, but not up!
                  Never had Yellow Perch but if they are anything like the Bluegills we have down here I would deep fry or pan fry or grill! Good eats!

                      Better than blugill... really! Perch'll hit 2 pounds for a nice one. Record's like 4! Closely related to the Walleye... another EXCELLENT fryer... Mmm...

                          Hmm... well..the ONLY way I have ever had wallies is about 4 hours outta the water. And dang..it's a tough call for me that way.

                          I guess if put to it... perch gets the nod as the best danged thing to drop in a fryer.
